Blueberry Snack Cake

Recipe : Blueberry Snack Cake

Procedure :
2 c Flour
1/2 ts Salt
1 1/3 c Sugar
2 1/2 ts Baking powder
1 ts Cinnamon
1 tb Grated lemon rind
2/3 c Shortening
2 Eggs
1 c Milk
3 tb Flour
2 tb Sugar
2 c Blueberries
Recipe by: Inn recipes Heat oven 400. Grease pan, dust with flour. Mix first 9 ingredients into large mixing bowl on low speed. Mix and blend well. Combine 3 tbls flour and 2 tbls sugar mix gently with blueberries. Fold into batter. Spread batter in pan and bake about 40 minutes. This is a baked good that we serve on many cold mornings fresh out of the oven. It tastes wonderful with our home made jams.JM Mary Prentiss Inn Cambridge, Massachusetts -----
