Carrot CookiesRecipe : Carrot Cookies
Procedure :
2 cups carrots -- cooked 1/2 cup shortening 1 1/2 cups sugar 2 teaspoons vanilla 4 cups flour 4 teaspoons baking powder 1/2 teaspoon salt ***Icing*** 1 orange 1 1/2 tablespoons margarine powdered sugar Mash carrots; cream well with shortening, sugar and vanilla Add flour, baking p owder and salt. Mix well and drop by teaspoonfuls onto greased cookie sheet. Ba ke 12 minutes at 350 degrees. Icing: Grate peel of orange; juice orange to get 1/2 cup juice. Heat orange peel and j uice and add margarine. Take off stove before it boils and beat in powdered sug ar until like heavy cream. Frost cool cookies immediately. Rosa Lee McCracken Graham, Texas |
