Bean StewRecipe : Bean Stew
Procedure :
1/2 c Olive oil 2 ea Onions, chopped 4 ea Garlic cloves 2 lb Runner beans, trimmed & -- sliced 1 lb Tomatoes, chopped 1 tb Sugar 1 ts Salt 1/2 ts Black pepper 1 ts Basil 2 c Stock Heat oil in a pot & fry the onion for 2 minutes. add garlic & fry together. Add the rest of the ingredients & the seasonings. Mix together well. Fry for 5 minutes. Add stock. Simer till the beans are tender. Serve hot or cold. Jack Santa Maria, "Greek Vegetarian Cookery" |
